Jaggery Cake recipe
It is crucial to cut down sugar from our diet, it’s not easy as we Indians have total sweet tooth, any celebration or no celebration sweets and desserts are mandatory but owing to the urban lifestyle, stress levels, and pollution, off all not to forget the desire to be in good shape does make you refrain from those sweets.
However, with the availability of healthy options, you can still indulge in those sweets. There is no one to stop you, are they good for health? Well no they are not but still better than the sugar-laden and processed version of the sweet.
Importantly starving yourself or always declining the things that you love will bring lots of negativity in you and thus it is better than in portions consume the still healthy version of the delicacies that you like. The taste of this healthy version is truly good and most definitely your kids will like it.
It’s a great option for the mid-meal snacking or tiffin or the late night snacking. It has few basic ingredients that are easily available in your kitchen so here it goes.
1 cup hung curd
2 cup whole wheat flour
1 cup grated jaggery
½ cup olive oil
½ cup nuts of your choice
1tea spoon eno powder
½ teaspoon baking powder
½ teaspoon salt
In big bowl mix jaggery, curd and oil nicely till the three mixes well. Sieve flour, salt, baking powder, and Eno well for three times. Now slowly add the dry ingredients in the mixture of curd. Do not overbeat but let no lumps to stay also.
Add the nuts you can omit this step. In a greased cake pan pour the cake mix. Preheat the oven at a temperature of 180 degrees C for 10 minutes. Then put the cake pan in the oven to bake at 160 degrees C for 25 to 30 minutes. Check with a knife, if the knife comes out of the cake without any batter that means the cake is done.
If you desire to have it hot or let it cool down for some decorations. The cake will have a shelf life of 2 to 3 days but trust me it will go as soon as it comes out of the oven. Enjoy the delicacy.
